Fancy a change for your lunch or dinner? Try this Mexican tortilla bowl that you can fill with vegetables, chicken, meat or fish.
Serves 2
Tortilla bowl
– 2 tortilla wraps
– Spray olive oil
Mango salsa
– 1 mango peeled & roughly chopped
– 6 cherry tomatoes roughly chopped
– 1 spring onion sliced
– Juice of 1 lime
– 1 small red chilli finely chopped
– Salt & cracked black pepper to season
– Handful fresh coriander roughly chopped
Guacamole
– 1 medium avocado peeled & mashed
– 6 cherry tomatoes roughly chopped
– 1 spring onion sliced
– Juice of 1 lime
– 1 small red chilli finely chopped

Toppings
I filled my bowl with lettuce and garlic and chilli prawns.
However, you can fill yours with whatever you like for example: any stir fried vegetables (peppers, onions and mushrooms), chicken, beef, turkey, prawns or fish.
Methods
1. Brush your wrap on both sides with olive oil and then place into a high sided bowl – place under the grill for 5-10 minutes until the tortilla bowl hardens and the edges brown.
2. Mix all of the ingredients for the mango salsa in a bowl.
3. Mix all of the ingredients for the guacamole in a bowl.
4. Layer your tortilla bowl! I layered mine with: lettuce, prawns, mango salsa then guacamole 👌🏻
