Fakeaway Chow Mein

Serves 2

1 dessertspoon easy ginger
1 dessertspoon easy garlic
1 dessertspoon sesame or olive oil
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
Juice of 1 lime
2 dessertspoons sriracha sauce
2 nests wholewheat noodles
1 carrot grated
2 spring onions sliced
Protein of your choice – I used 150g king prawns but you could use chicken (2 fillets), salmon (2 fillets), turkey (2 steaks) or beef (300g)

– Cook noodles as instructed on the packet
– Heat the oil then add garlic, ginger, dessertspoons of sriracha and juice of 1/2 the lime
– Add grated carrot and sliced spring onion, stir fry for 3-4 minutes until vegetables are soft
– When the noodles are ready add to the vegetable mix and add both types of soy sauce, stirring to coat the noodles
– When the noodles and vegetables are heated, add the cooked prawns and stir fry for 3-4 minutes until piping hot
– Add remaining lime juice and serve
