
Enchiladas
Serves 4
Ingredients
Wraps
– 750g lean beef (5% fat) or turkey mince
– 8 tortilla wraps
– 2 tins of tomatoes
– 2 carrots grated
– 1 red onion chopped
– 1 pepper chopped
– 4 cloves of garlic minced or 4 teaspoons lazy garlic
– 1 tablespoon cumin
– 1 tablespoon paprika
– 1 teaspoon chilli powder (more if you like it hot)
Tomato sauce
– 1 tin of tomatoes
– 2 cloves of garlic minced or 2 teaspoons lazy garlic
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1/2 teaspoon chilli powder
Optional extra
– light sprinkling grated cheddar
Salt & pepper for seasoning
Methods
– cook the mince until light brown
– add the vegetables & garlic then cook until the vegetables are soft
– add the spices & tinned tomatoes then simmer for 10 minutes until tomatoes reduce
– in a bowl mix the sauce ingredients & set aside
– split the mince & vegetable mix between the 8 wraps. Then wrap & place into 1 or 2 greased oven proof dishes
– pour the sauce on top of the wraps & spread
– top with grated cheddar
– bake for 10 minutes or until the cheddar has melted
