Chicken Fried Rice

Serves 2

400g chicken
1 bag microwaveable rice
2 spring onions
2 eggs
2 cloves of minced garlic or 2 teaspoons easy garlic
1 teaspoon easy chilli
2 tablespoons light soy sauce
1 tablespoon sesame oil

Optional ingredients
1 diced onion
4 sliced mushrooms
Handful frozen peas

– Stir fry chicken in sesame oil, garlic & chilli
– Cook rice
– Add rice to chicken and crack in the 2 eggs
– Keep stirring the mix until the egg is cooked and broken up throughout the rice
– Add the soy sauce and sliced spring onion
– Stir until piping hot then serve
