Smoky Beef

Serves 2

400g 5% fat beef mince
2 medium baked potatoes
400g passata
Dash of red wine (optional)
4 garlic minced
4 dessertspoons of paprika
Cracked black pepper
1 onion chopped
1 pepper sliced
Large handful roughly chopped coriander
8 Cherry tomatoes sliced

1. Bake the potatoes
2. Fry the mince in the garlic once brown add the onion and peppers stir frying until cooked thoroughly
3. Sprinkle the mince mixture with paprika and season with black pepper
4. Add the passata & a dash of red wine
5. Reduce for 10-15 minutes
6. Add 3/4 of the coriander and stir thoroughly
7. Place your potato on top of a bowl of spinach, cover in the smoky Beef, sprinkle with the remaining coriander and sliced tomatoes
