Savoury Pancakes

I hate wasting food and this is the time of year when you have a whole range of odd bits and pieces. When I looked in the fridge to make my lunch I found eggs, rocket, tomatoes and bacon leftover from hosting a brunch for friends at New Year. So I decided to make some savoury pancakes and use the ingredients before they had to be thrown out.

Serves 4

2 handfuls of rocket
8 plum tomatoes sliced
5 eggs
4 slices of bacon
200g self-raising flour
250ml semi-skimmed milk
Cracked black pepper

1. Grill the bacon and slice finely
2. Mix pancake batter – flour, 1 egg & milk until smooth
3. Pour 1/4 of the batter in a frying pan when bubbles appear flip the pancakes & cook until golden brown
4. Crack the eggs gently into bubbling boiling water & poach for 3 minuets
5. Stack your pancakes with rocket, tomatoes, eggs & sprinkle on the sliced bacon
6. Serve with cracked black pepper
