Salsa Chilli Chicken

Enjoy this healthy meal for dinner or lunch. This easy to prepare meal includes a marinade and salsa from scratch.

Serves 2

Ingredients
1 bag microwaveable rice

Marinated chicken
2 chicken fillets sliced in half (to enable marinade to cover more of the chicken)
4 teaspoons easy garlic
2 teaspoons easy chilli
1 teaspoon paprika
1 tablespoon honey
Juice of 1 lemon
Handful of chopped fresh coriander
Salt & pepper

Salsa
250g cherry tomatoes roughly chopped
Handful of chopped fresh coriander
1 spring onion sliced
1 teaspoon easy garlic
1 teaspoon easy chilli
Juice 1/2 lime
Salt & pepper

Methods
1. Mix the marinade ingredients & leave the chicken to rest in it for one hour
2. Transfer chicken & marinade to an ovenproof dish – cook for 25-30 minutes depending on the thickness of the fillet
3. Mix the salsa ingredients
4. Cook the rice as per the packet
5. Stack the rice, cooked chicken & salsa then drizzle over some of the remaining marinade from the ovenproof dish

– you can store leftover salsa in a Tupperware container in the fridge
