Pineapple Delight

Want a sweet treat or dessert but don’t want to go off track? Try this pineapple bowl filled with protein rich yoghurt and topped with seeds, coconut & peanut butter all sources of good fats.

Serves 2

Ingredients
1 pineapple
200g Total 0% Greek yoghurt
2 teaspoons flax seeds
2 teaspoons coconut
2 teaspoons milled flax seeds
2 dessertspoons of meridian peanut butter
2 dessertspoons frozen berries (place in a sandwich bag and break up)

Method
1. Slice the pineapple in half
2. Slice a grid pattern into the pineapple and slide a knife underneath to ease the pineapples cubes out (set aside)
3. Discard the cubes that make up the middle core of the pineapple
4. Layer the bowl with pineapple, yoghurt and finally your toppings – coconut, seeds, peanut butter & berries
