Beef & Garlic Potato Stack

Beef Stack

Serves 2

300g 5% mince beef
2 medium potatoes
2 eggs
2 chopped spring onions
4 teaspoons easy garlic or 4 cloves minced garlic
Handful rocket
6 cherry tomatoes
Salt & cracked black pepper
Olive oil

1. Cube your potatoes, boil until soft then drain & place in a bowl
2. Season the cubes, add a drizzle of oil & 2 teaspoons of easy garlic or 2 minced cloves – stir gently
3. Place potatoes on a baking tray & bake in the oven until golden
4. Whilst the potatoes are cooking fry the mince in 2 teaspoons of easy garlic or 2 minced cloves
5. Throw in the spring onion and season with salt and black pepper – stir fry for 1 minute
6. Boil water until bubbling vigorously then gently crack in both eggs – poach for 3 minutes
7. Stack your potatoes, beef & poached egg
8. Serve with rocket & cherry tomatoes (to soften the tomatoes place in the oven with the potatoes half way though)

Note you could use turkey mince rather than beef mince!
